Subject: good question :-)
Depends a bit on what type of reading you are interested in (fiction, non-fiction etc.) That aside though there are definitely a fair few I'd throw out there, but I'll keep the list short for now (mail me if these interest you and you want a wider list):

Fiction:
In the Skin of a Lion by Ondaatje
Hallucinating Foucault by Patricia Duncker
My Name is Asher Lev by Chaim Potok (or by the same author - The chosen, The Promise)
Slowness, The Unbearable Lightness of being by Milan Kundera
If on a Winter's Night a Traveller by Italo Calvino (definitely recommend reading it in a language that has gender specific articles (Italian, French etc.)
An Autobiography of Red, Plainwater by Anne Carsons

Non-Fiction:
Fooled by Randomness by Nassim Nicholas Taleb
Outliers by Malcom Gladwell
The Ecology of Commerce by Paul Hawken
The Affluent Society by Galbraith
The Great Conversation by Robert Hutchins (as well as both volumes of the Syntopicon if you find time).
