Butternut served with yoghurt & coriander: chop your butternut in large cubes and place in an oven at 140 degrees farenheit, with a little butter and salt, bake until end turn golden brown, then mash the butternut, place in a tea cup and turn it over onto a plate, place a little plain yoghurt around the butternut, top with a splash of balsamic vinegar and fresh coriander... Paella: take a large saucepan, and put some sunflower oil and garlic, a hint of chilli, some butter and red & green peppers, blanch slightly, then and your seafood mis, some de-shelled prawns, calamari tubes, some cubes of linefish and finally a few muscles, cook through and add a splash of white wine, salt & pepper to taste and a dash of fresh saffron (in another pot cook some rice with some tumeric for colour, strain and rinse) then add your rice and mix through, to add a different dimension, you can add chicken strips or chorico (portugeuse sausage) or both... keep 1 or 2 prawns in the shell and place them ontop for garnish... Halva ice cream (halva can be obtained at your local medditeranean delicatessen) take about 2 litres of vanilla ice cream and let it melt a bit out of the freezer, grate your "halva" and mix the 2, place back in the freezer and allow to harden. Wines: started - a good chardonnay... mains - sauvignon blanc or shiraz will do nicely Dessert - coffe or irish coffee... Bon appetit.. R_R |
